The North Wing Christmas Blog Bake Off

Just in time for Christmas, some of the ladies at The North Wing have gotten together and brought to you the Christmas Blogtrain Bakeoff!!! A blogtrain with a difference!!! Instead of

scrapping goodness.. we are sharing with you our favourite recipes.. although don't be fooled.. some wingers may have extras for you.....

First up a recipe from Skyblue

Next we have a yummy treat from Becca

Simnel Cake

Prep Time:30 Min
Cook Time: 2 Hrs 30 Min
Ready In:3 Hrs 20 Min

Original Recipe Yield 1 - 8 inch springform pan

Ingredients
1 cup margarine, softened
1 cup light brown sugar
4 eggs
1 3/4 cups self-rising flour
1 1/3 cups golden raisins
1 cup dried currants
2/3 cup candied cherries - rinsed, dried and quartered
1/4 cup candied mixed fruit peel, chopped
2 tablespoons grated lemon zest
2 teaspoons mixed spice

1 pound almond paste
2 tablespoons apricot jam
1 egg, beaten

Directions
Preheat oven to 300 degrees F (150 degrees C). Grease and flour an 8 inch springform pan. Line the bottom and sides of pan with greased parchment paper.

In a large bowl, cream together the margarine and brown sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour. Stir in the golden raisins, currants, candied cherries, mixed fruit, lemon zest and mixed spice. Pour 1/2 of batter into prepared pan.
Divide almond paste into 3 equal portions. Roll out 1/3 of the almond paste to an 8 inch circle. Place the circle of almond paste on the cake batter in pan. Cover with remaining cake batter.
Bake in the preheated oven for 2 1/2 hours, or until evenly brown and firm to the touch. If the cake is browning too quickly, cover with foil after an hour of baking. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Set oven to broil.
When the cake has cooled, brush the top with warmed apricot jam. Roll out 1/3 of the almond paste into an 8 inch circle and place on top of cake. Divide the remaining 1/3 of almond paste into 11 pieces and roll into balls. These represent the 11 Apostles (excluding Judas.) Brush the almond paste on top of cake with beaten egg. Arrange the 11 balls around the outside edge on the top of cake. Brush the balls lightly with egg.

Place cake under the broiler for 8 to 10 minutes, or until almond paste is golden brown.

Over at The North Wing Asylum we are having an event just for Taggers!!!

Between Monday 23rd of August and Tuesday 31st August we are running The Tag Marathon! (you must join the forum to participate)

There are 26 tagging related tasks including making tags for members, themed challenges and snag tag challenges. You must complete each "mile" before moving onto the next.

The first to cross the finish line wins a $5 tube certificate and a $10 North Wing Scraps Voucher. We also have prizes for 2nd and 3rd place, a medal for each participant and "boobie" prizes for various acievements such as MOST TAGS MADE, SLOWEST RUNNER etc...

We ask that you can commit to working with a minimum of one scrapkit per calendar month, and in return you get to keep and use that product as you wish.

I am super excited today!!! As many of you know, we've been real unhappy at the service provide by Aimoo for our PSP Forum "The North Wing" and we always had bigger and better plans for it. Matron Gypsy had a vision of a North Wing Website featuring tutorials, a store a forum and so much more. When Gypsy passed away in January the rest of the staff were determined to make that dream a reality! So I am super proud to announce that The North Wing Asylum id officially OPEN! (mind the dust, the construction team still have a few kinks to work out!!

In Loving Memory

There is one less light shining from the cells at The North Wing.
We lost our beloved Matron on 16th January 2010 when she and her husband died in a tragic car accident. Those who knew Gypsy were honoured to have had their lives made just a little better for having known her. Gypsy was laid to rest last week under the old oak tree in her beloved meadow, sharing a handmade coffin with her beloved Terry.

We will light a candle in your cell sweet friend to light your way home!

Dear Angels up in heaven,
Show your "Welcome" sign today,
For a new Angel is calling,
Our Gypsy's on her way.

Her face is full of kindess,
She sparkles from her eyes,
She holds the gentlest of smiles,
Love from her heart does rise.

Shes very easily pleased you know,
Just give her PSP and supplies,
She'll make you beautiful tags and scraps,
To decorate the skies.

We loved her as our Matron,
But as equals she saw us,
And she'd tell a tale to make us laugh,
Our happiness was a must.

In times of need she'd come to us,
With Cuddles, Love and Care,
Or maybe she'd give us advice,
Whatever...She'd be there.

Please tell her she'll be greatly missed,
And thoughts are with her still,
She hasnt been forgotten,
Whats more she never will.

Find the softest pillow please,
To lay her head upon,
Place a kiss upon her cheek,
And tell her who its from.

And as the day is closing,
With the darkness of the night,
Please Angels whisper in her ear,

Welcome to The North Wing

It was with heavy hearts that we discovered last week that our beloved Padded cell forum would be closing its doors... but we inmates are not yet ready to be released back into the community so a few of use went exploring in the depths of the asylum and stumbled upon the long forgotten North Wing! It was a bit dusty up there and a definate fixer upper.. but the cell doors are solid, the padded walls are intact and we had the builders and interior designers in there getting it ready...
